Request for Important Information
Can someone please post the recipe for the enchiladas that Mom used to make with the flour tortillas? By "Someone," I mean Mom (although I think Danny might have this one as well). As part of my plans to domesticate myself, I am hoping to come up with a vegetarian version of these fine roll-ups this weekend for a dinner party.

ReplyDeleteMary - I make vegetarian enchiladas all the time since my lady friend doesn't eat meat.
ReplyDeleteRecipe (for 2 people):
1 can black beans
1 can green chilis
2 cups cheese
1 pkg enchilada seasoning
Heat those four things up in a pan, then scoop into tortillas. Once the tortillas are rolled and in a baking pan, put cheese, black olives, diced tomatoes (you can also drain Rotel), jalapenos (if desired)on top of the tortillas. Then bake in the oven for about 10-15 minutes at 350.
